Ingredients

Quantity Ingredient
30g butter
1 onion, sliced
5-6 lettuce leaves, finely shredded
1/2 teaspoon salt
2 teaspoons sugar
3 sprigs parsley
500g fresh shelled peas
1 rasher bacon, diced, (optional)
1/2 cup water
1 teaspoon butter
1 teaspoon plain flour

Method

  1. Put the butter in saucepan. Add the onion, lettuce, salt, sugar, parsley, peas and bacon, if using. Mix all well together. Add the water. Bring to the boil, cover and cook gently for about 20 minutes, or until very tender. Discard herbs. Blend butter with flour and stir into peas. Return to the heat, shaking to roll the peas around until the butter and flour mixture has combined with the liquid. As soon as it is boiling again, remove from the heat and serve.

Note:

  • frozen peas are also delicious cooked this way.
