Pastry savouries are popular and this easily prepared pastry is successful every time. Use to make pastry cases or almond cheese rounds.

Ingredients

Quantity Ingredient
2 cups plain flour
125g butter
2 tablespoons grated parmesan cheese
2 eggs
1/2 teaspoon salt

Method

  1. Sift the flour with a pinch of salt into a bowl and rub in the butter until mixture resembles fine breadcrumbs. Stir in the parmesan. Beat eggs and salt. Take out 1 tablespoon of the beaten egg, mix with 1 teaspoon water and set aside for glazing. Make well in centre of the flour mixture and pour in the remaining egg. Lightly mix to a smooth dough. Knead lightly, wrap in cling wrap and chill for at least 2 hours.
