Ingredients

Quantity Ingredient
90g unsalted butter
1 cup icing sugar, sifted
2 teaspoons brandy, or more, to taste
1 egg white, beaten, (optional)

Method

  1. Cream the butter until soft. Add the icing sugar and beat until white and light. If liked, substitute 1/4 cup ground almonds for 1/4 cup of the icing sugar. Mix in the almonds, if using, and work the brandy into the mixture. Fold in the stiffly beaten egg white. Chill until ready to serve.
