Ingredients

Quantity Ingredient
1 tablespoon sugar
1 1/2 tablespoons plain flour
2 teaspoons dry mustard
1 teaspoon salt
2 egg yolks
1/4 cup melted butter
1 1/2 cups milk
1/3 cup vinegar
A pinch paprika, (optional)

Method

  1. Combine the dry ingredients in the top of a double-boiler. Add the egg yolks, butter and milk, and blend well. Gradually add the vinegar. Cook, stirring constantly, until thick. Add a pinch of paprika, if desired. Use in the same way as you would mayonnaise and with the same variations.
