Radicchio salad with shaved Parmesan

Ingredients

Quantity Ingredient
1 large head radicchio
2 tablespoons balsamic vinegar
salt and freshly ground pepper
1/4 cup light olive oil
60g shaved parmesan cheese

Method

  1. Separate the radicchio leaves, wash, dry and tear into bite-size pieces, before placing in a salad bowl. In a small bowl mix together the vinegar, salt and pepper.
  2. Gradually add the oil in a slow stream to form a dressing, whisking all the time with a fork, until well amalgamated. Drizzle the salad with half the dressing and toss gently. Add the Parmesan shavings before serving.

Note:

  • try making this salad with rocket leaves in place of the radicchio.
