This side salad is my favourite to serve with cold poached salmon.

Ingredients

Quantity Ingredient
2 lebanese cucumbers
1/2 teaspoon salt
1 tablespoon white wine vinegar
1 tablespoon water
1 teaspoon sugar
2 tablespoons snipped dill

Method

  1. Slice cucumber thinly. Place in a colander and sprinkle with the salt. Press lightly and drain. Make a dressing with the vinegar, water and sugar. Steep the cucumber slices in the liquid for an hour before serving, and then mix in the dill. Serve with cold meats or fish.
