Ingredients

Quantity Ingredient
1.8kg chicken pieces
or 1 size 18 chicken, jointed
3/4 cup plain flour
1 teaspoon salt
1/4 teaspoon pepper
1 egg, lightly beaten
2 tablespoons water
1 cup dried breadcrumbs or corn meal
olive or vegetable oil, for frying

Method

  1. Dry chicken pieces well with paper towel and remove any excess fat. Combine the flour, salt and pepper then lightly dust each piece with the seasoned flour. Shake off excess flour, dip in beaten egg and water and coat with the breadcrumbs. Heat enough oil to make a shallow layer in a frying pan. Place a few pieces of chicken in at a time and brown on all sides. Place in a baking dish and bake for 45 minutes at 180°C.
