Ingredients

Quantity Ingredient
1 French roast chicken
8-10 button mushrooms
4-6 tomatoes, halved or quartered
2 red onions, peeled and quartered
1/2 cup pitted black olives
2 tablespoons roughly chopped parsley

Method

  1. Prepare the chicken. While the chicken is cooking, prepare the garnish. Place the mushrooms with the tomatoes, onions and olives around chicken for the last 20 minutes of cooking. Serve the chicken surrounded by vegetables. Scatter with parsley.
