Grilled lamb with lemon couscous

Ingredients

Quantity Ingredient
3 cups chicken, beef or vegetable stock
1 cup diced zucchini
1 cup diced pumpkin
2 tablespoons olive oil
2 cups instant couscous
2 tablespoons Preserved lemons
freshly ground pepper
4 pieces backstrap lamb fillets
8-12 snipped mint leaves, (optional)

White bean purée:

Quantity Ingredient
1 x 440 g can white cannellini beans
3 garlic cloves, crushed
1 lemon, juiced and rinded
1 tablespoon olive oil

Method

  1. Make the white bean purée first and set aside. Bring the stock to the boil in a saucepan with the vegetables and simmer until just tender. Add the oil, reserving a little for cooking the lamb. Stir in the couscous, remove from the heat and leave to stand, covered, for 5 minutes. Add the preserved lemon and fluff the couscous with a fork. Meanwhile, season the lamb with pepper and brush with olive oil. Have ready a preheated grill or heavy-based frying pan and cook until tender, about 4–5 minutes each side. Cover and rest for 5 minutes. To serve, spoon the couscous onto serving plates. Top with thick slices of lamb and finish with a dollop of white bean purée. Garnish with mint leaves, if using. Harissa could also be offered with this.
  2. White bean purée: In a blender, purée the drained beans (saving the liquid) with lemon juice and garlic. Transfer to a small saucepan, add the oil and simmer gently for 5 minutes. If too thick, stir in a little of the reserved liquid.
