Chuck steak, gravy or shin and blade or beef cheek are all good for the long, slow cooking of this beautiful French dish. Make the day before and chill, allowing the fat to set on the top and be lifted away.

Ingredients

Quantity Ingredient
750g lean beef, cut into large cubes
2 garlic cloves, finely chopped
3 tablespoons olive oil
1 1/2 cups red wine
bouquet garni
125g pancetta, thickly sliced, (optional)
1 large onion, finely chopped
2 carrots, sliced thickly, across
2 tomatoes, peeled and quartered
1/2 cup beef stock
1-2 strips orange rind
salt and freshly ground pepper

Method

  1. Place the beef in a large bowl with the garlic, 1 tablespoon olive oil, wine and bouquet garni. Marinate in a cool place for at least 3 hours. Cut the pancetta, if using, into small cubes. Heat the remaining oil in a flameproof casserole and sauté the pancetta for 3 minutes.
  2. Drain the beef, pouring the marinade into a separate saucepan. Boil rapidly until reduced by half. Meanwhile, add the beef to the pancetta and cook until coloured over a brisk heat. Add the onions and carrots and cook for a further 5 minutes. When the marinade has reduced, add to the pan with the bouquet garni. Add the tomatoes, stock and orange rind and season with the salt and pepper. Cover and simmer gently for 2–2 1/2 hours, until meat is tender. Turn the meat into a serving dish. Remove the bouquet garni and any excess fat. Pour over the meat and sprinkle with chopped parsley.

Note:

  • to thicken gravy, combine 30 g butter with 1 tablespoon flour and whisk into the sauce. Bring to the boil and simmer for a few minutes.
