Pina colada is the favourite cocktail of Hawaii, where pineapple and coconuts grow in abundance. The alcoholic version packs a real punch so there’ll be some who may want to drop the rum. If you haven’t a cocktail shaker, use a blender.

Ingredients

Quantity Ingredient
crushed ice
50ml white rum
50ml coconut cream
100ml unsweetened pineapple juice
slice fresh pineapple, or pineapple leaf, to decorate

Method

  1. Place 3 tablespoons of crushed ice in a cocktail shaker and add the rum, coconut cream and pineapple juice. Shake well until the drink is frothy. Pour into a tall glass and decorate with a slice of pineapple, or a tiny pineapple leaf.
