Ingredients

Quantity Ingredient
2 cups mint leaves
6 cups water
2 cups sugar
thin strips lemon rind
2/3 cup lemon juice
a few sprigs mint, to decorate

Method

  1. Wash the mint leaves, drain and put into a saucepan with 1 cup of the water, the sugar, lemon rind and juice. Stir over a gentle heat, until the sugar dissolves. Raise the heat and boil for 5 minutes. Add the remaining water and allow to cool. Strain and chill. Serve in a tall jug with ice cubes. Pour into tall glasses over ice cubes or crushed ice, and decorate each glass with a sprig of mint, if desired.
