Easy to make, this cheese pudding is lovely with a salad for a light meal.

Ingredients

Quantity Ingredient
90g butter
12 x 1 cm-thick slices white bread, crusts removed
1 cup grated mature cheddar cheese
1 1/2 cups milk
2 eggs, beaten
salt and freshly ground pepper
A pinch dry mustard
2 tablespoons chopped fresh chives

Method

  1. Preheat oven to 180°C. Butter all the bread slices, cut 4 or 5 slices into 2.5 cm-wide fingers and use to line a deep, straight-sided casserole, buttered side against the casserole. Cut the remaining slices into cubes.
  2. Make alternate layers of bread cubes and grated cheese in the casserole. Mix together the milk, eggs, mustard and chives. Add salt and pepper, to taste. Pour into the casserole and cook for 30 minutes.
