Ingredients

Quantity Ingredient
1 tablespoon powdered gelatine
1/4 cup cold water
1 tablespoon flour
1/2 cup sugar
1/4 cup orange juice
1 tablespoon lemon juice
1 cup hot water
1/2 cup passionfruit pulp

Method

  1. Sprinkle the gelatine over cold water. Combine the flour and sugar in a saucepan, add enough orange juice to blend to a smooth paste. Add remaining orange juice, lemon juice and hot water. Bring to the boil, stirring until mixture thickens. Add the gelatine mixture and stir until dissolved.
  2. Cool, then transfer to a large bowl and chill until starting to set. Beat well until very thick and at least doubled in volume. Add the passionfruit pulp and beat again. Turn into a serving bowl and chill until set. Serve large spoonfuls on individual dessert plates or bowls.
