Ingredients

Quantity Ingredient
6 medium bananas
1/4 cup brown sugar
1/2 cup fresh orange juice
1/4 teaspoon grated nutmeg
1/4 teaspoon ground cinnamon
1/2 cup sherry
30g butter
4 tablespoons rum

Method

  1. Peel the bananas and split them in halves, lengthwise. Place in a buttered baking dish. Combine the sugar with the orange juice, spices and sherry. Heat and pour over the bananas. Dot with butter and bake for 10–15 minutes, or until tender, basting once or twice. Remove from the oven and sprinkle with warmed rum. Serve with the rum flaming.
