Ingredients

Quantity Ingredient
1 cup plain flour
2 tablespoons sugar
1 teaspoon bicarbonate of soda
1 teaspoon mixed spice
1 teaspoon ground cinnamon
1 teaspoon ground ginger
60g butter
2 tablespoons golden syrup

Method

  1. Preheat the oven to 230°C. Sift the dry ingredients. Melt the butter and syrup, and pour onto the flour mixture. Mix well and roll into balls each about the size of a walnut. Place on a well-greased baking tray, allowing room to spread. Bake for 5 minutes, and then reduce the heat to 180°C and bake for a further 10 minutes. Allow to cool on the tray.
