Ingredients

150g butter
1 cup brown sugar
1 egg
1 teaspoon vanilla essence
2 cups plain flour
1/4 teaspoon salt
1/2 teaspoon bicarbonate of soda
375g pitted dates

Method

  1. Preheat the oven to 180°C. Cream the butter, gradually add the brown sugar, and cream well together. Add the egg and vanilla and beat well. Sift the flour with the salt and bicarbonate of soda, and mix to make a dough. Chill the dough. Take small pieces of dough and mould around the dates in cocoon shapes, or roll out the dough and cut in 5 cm rounds, and wrap those around the dates. Bake on greased trays for 15–20 minutes. Any remaining dough may be used for plain biscuits.
