This is a simple biscuit, with the warm fragrance of cardamon.

Ingredients

Quantity Ingredient
125g butter
1 teaspoon bicarbonate of soda
1 teaspoon ground cardamom
1/4 teaspoon salt
1 cup light brown sugar, firmly packed
1 egg
2 cups plain flour, sifted
1 teaspoon cream of tartar

Method

  1. Cream the butter and add the soda, salt and cardamom. Mix well and gradually beat in the sugar until the mixture is light and fluffy. Beat in the egg. Sift together the flour and cream of tartar. Gradually stir into the butter mixture to form a dough. Chill until stiff enough to handle, for 3–4 hours. Preheat the oven to 180°C. Scoop out the chilled dough, shaping into small balls. Place on ungreased baking trays. Use a wetted fork to press each cookie into a round shape. Bake for 15–18 minutes, until light golden. Remove from the trays, cool and store airtight.
