Ingredients

Quantity Ingredient
250g butter
3 tablespoons caster sugar
1 teaspoon vanilla essence
2 cups plain flour
1/2 teaspoon salt
3/4 cup chopped, blanched almonds
1 cup icing sugar

Method

  1. Preheat the oven to 180°C. Cream the butter with the sugar and vanilla. Sift the flour and salt and blend into the creamed mixture with the almonds to form a dough. Shape into balls the size of walnuts, or mould into crescent shapes. Bake on baking trays for about 15 minutes. Remove from the trays and roll in the icing sugar. Cool on a rack and roll again in the icing sugar.
