Christmas time is the one time of the year when baking must be done in advance, not only to clear the way and avoid the Christmas rush, but to allow the flavours of the marvellous Christmas foods – the puddings, fruit minces and cakes – to mature to delicious perfection.

European Christmas food is unique and especially rich in butter, fruits, spices and alcohol (which need time to settle down and mature). Even the hard sauces are all the better for sitting in the cool of the refrigerator for a few weeks. One month before Christmas Day is a good time to set aside a few days for the making and the baking. There is quite a bit of preparation: the shopping, the cake tins to be lined, the fruits to be cut up, almonds to be blanched and so on, before the actual baking takes place.

Christmas food makes a wonderful gift for friends who don’t have time or are unable to make their own. Christmas cake or pudding are some of the nicest gifts and all the more so for being made with love and care.
