Artichokes braised in wine and garlic

Artichokes cooked gently with oil, wine and garlic are an epicurean treat.

Ingredients

Quantity Ingredient
4 globe artichokes
3 tablespoons olive oil
2 garlic cloves, crushed with a little sea salt
1/2 cup white wine
freshly ground black pepper

Method

  1. Trim and prepare the artichokes. Heat the olive oil in a large frying pan over a medium heat. Add the garlic, wine and artichokes. Cook the first side of the artichokes for about 5–8 minutes and then turn to cook the other side, pressing down well and cooking for another 5–8 minutes until the artichokes are tender. Older artichokes may take longer. Serve seasoned with plenty of pepper.
