Smoky eggplant caviar, also known as poor man’s caviar, was created by the wives of the Beluga caviar fishermen in Russia who could never afford to eat the caviar they harvested for wealthy noblemen. It is a much more affordable topping for pieces of bread or toast than the real thing.

It gets its wonderful smoky flavour from the eggplants being charred under a hot grill or on a barbecue. Serve piled in bowls alongside Olive Bread, Lavash, sliced baguette or lightly toasted rounds of pita bread.
