250g butter
185g icing sugar, sifted
1 egg
1 teaspoon natural vanilla extract
375g plain flour
1/2 teaspoon bicarbonate of soda
1 teaspoon baking powder
1/4 teaspoon salt
185g walnuts, finely chopped
walnut halves, to decorate

Method

  1. Cream butter with icing sugar. Add egg and vanilla, and beat well. Sift flour with bicarbonate of soda, baking powder and salt. Stir into creamed mixture with chopped nuts.
  2. Form mixture into small balls, place on greased baking trays and top each with a walnut half. Bake in a preheated moderately hot oven (190°C) for 10–12 minutes or until lightly browned. Cool on wire racks.
