60g butter
6 ham steaks
1 tablespoon plain flour
375ml dry white wine
3 tablespoons redcurrant jelly
1 teaspoon dijon mustard
freshly ground black pepper
salt

Method

  1. Heat butter in a frying pan; when sizzling, brown ham steaks, in 2 or 3 batches, for about 2 minutes each side. Remove ham and keep warm. Stir flour into remaining butter and cook for 1 minute.
  2. Add wine gradually, stirring until sauce boils and thickens. Stir in redcurrant jelly and mustard, season with a very little salt and pepper and simmer for 1 minute. Spoon sauce over ham.
