500g turnips, peeled
60g butter
freshly ground black pepper
salt

Method

  1. Cut turnips into wedges, quarters or thick slices. Cook in boiling lightly salted water for 10–15 minutes or until tender. Drain and cool.
  2. Heat butter in a frying pan and brown turnips on all sides, a few at a time. Do not crowd the pan. Season with salt and pepper, remove to a heated serving dish and keep warm while browning remaining turnips, adding more butter when necessary.
