Ingredients

60g butter
1 onion, chopped
350g turkey, cooked and cubed
460g potatoes, cooked and cubed
125ml leftover gravy or cream, or a mixture of both
freshly ground black pepper
1 tablespoon parsley, finely chopped
salt

Method

  1. Heat butter in a large frying pan and fry onion until golden-brown. Stir in turkey and potatoes and cook pressing down with a spatula to form a flat cake, for 3–4 minutes.
  2. Lower heat, pour in gravy or cream, and season with salt and pepper. Cook for a further 10 minutes. Serve cut into wedges, sprinkled with chopped parsley.

Note

  • Any leftover stuffing can be added with the turkey and potato.
