Tuna with peas

A dish that can be created using the tuna, frozen peas, pasta and tin of tomato paste you always have on hand in the kitchen.

Ingredients

Quantity Ingredient
400g tinned tuna in oil
1 onion, finely chopped
2 tablespoons tomato paste
1 tablespoon parsley, chopped
500g peas, shelled
freshly ground black pepper
pinch sugar
pasta or rice, freshly cooked, to serve
salt

Method

  1. Drain oil from tins of tuna into a large saucepan. Heat oil and sauté onion over a medium heat until soft. Stir in tomato paste, parsley, peas and enough water barely to cover peas. Season with salt, pepper and sugar. Cover and cook for 10 minutes.
  2. Add tuna, broken into chunks, and simmer for 3 minutes more. Serve over freshly cooked pasta tossed with butter and parmesan cheese, or with rice, noodles or crusty bread and butter.
