Ingredients

60g butter, plus 2 teaspoons extra
2 tablespoons plain flour
2 teaspoons dry mustard
375ml milk
freshly ground black pepper
60g cheddar cheese, grated
400g tinned tuna in oil, drained and broken into chunks
25g fresh breadcrumbs
salt

Method

  1. Melt 60 g butter in a saucepan, blend in flour and cook over gentle heat for 1 minute. Add mustard, then milk, stirring until sauce thickens. Season with salt and pepper and add 2 tablespoons grated cheese.
  2. Fold in tuna then turn mixture into a greased flameproof dish. Top with remaining cheese mixed with breadcrumbs and dot with remaining butter. Place under a preheated grill until bubbly and golden.
