Ingredients

Quantity Ingredient
4kg ripe tomatoes, chopped
2 garlic cloves, chopped
500g onions, chopped
575g brown sugar
8 cloves
2 tablespoons rock salt
pinch cayenne
1 teaspoon cinnamon
1/2 teaspoon ground ginger
875ml vinegar

Method

  1. Put all ingredients in a heavy saucepan. Bring to the boil slowly, then simmer until tomatoes and onions are very soft. Stir from time to time with a wooden spoon to prevent burning. Strain mixture through a nylon sieve, bottle in sterilised, warm bottles and cork. This sauce keeps well for a long time.
