1/2 quantity Biscuit pastry
Lemon cheese
cream, whipped, (optional)

Method

  1. Roll out pastry dough thinly and use to line 12 shallow tartlet tins.
  2. Prick bases and chill for 20 minutes, then bake blind in a preheated moderate oven (180°C) for about 15 minutes or until pastry is golden. Remove from tins and cool on a wire rack.
  3. Fill each tart shell with lemon cheese and top with a dab of whipped cream, if liked. Serve within 20 minutes.
