Italian tuna with haricot beans and tomatoes

Ingredients

Quantity Ingredient
150g dried haricot beans, soaked overnight and drained
60ml olive oil
1 garlic clove, sliced
3 large ripe tomatoes, peeled and chopped
freshly ground black pepper
200g tinned tuna in oil, drained and broken into chunks
1 teaspoon fresh basil, chopped
or 1/2 teaspoon dried basil
salt

Method

  1. Cook beans in fresh water to cover until tender. Drain. Heat oil in a large saucepan and brown garlic. Discard garlic and add tomatoes. Salt lightly and cook for 10 minutes.
  2. Stir in cooked beans and tuna chunks, sprinkle with basil and plenty of pepper and simmer for 10 minutes. Serve very hot.
