6 small tomatoes, peeled and cored
30g butter, melted
freshly ground black pepper
fresh basil, cut into fine ribbons
or parsley, chopped
salt

Method

  1. Arrange tomatoes in a buttered baking dish, blossom ends down. Brush with melted butter and sprinkle with salt and pepper.
  2. Bake in a preheated moderately hot oven (190°C) for 10–15 minutes or until slightly softened and heated through. Brush with melted butter and sprinkle lightly with salt every 5 minutes while cooking. Serve at once, sprinkled with basil or parsley.
