Ingredients

Quantity Ingredient
750g tomatoes, peeled and chopped
1 garlic clove, crushed
2 tablespoons parsley, chopped
3 tablespoons olive oil
750ml chicken stock
freshly ground black pepper
pinch sugar
salt

Method

  1. Place tomatoes in saucepan with garlic, parsley and olive oil. Cook gently for about 5 minutes.
  2. Add stock, salt, pepper and sugar and cook for a further 5 minutes. This soup can be eaten hot or chilled.
