Ingredients

oil, for frying
310g raw cashews
310g blanched almonds
640g raw peanuts
1 tablespoon salt
2 teaspoons * garam masala [rid:5262]
2 teaspoons chilli powder

Method

  1. Heat oil in a deep frying pan and fry nuts, in batches of about 1 cup at a time, over medium heat until golden brown and crisp. Drain on crumpled paper towels.
  2. Place fried nuts in a bowl and add salt, garam masala and chilli powder. Mix well to coat nuts thoroughly. Cool completely before storing in airtight jars.
