Ingredients

Quantity Ingredient
1.75kg sugar
1 teaspoon salt
1.25 litres white vinegar
12 cloves
10cm cinnamon stick
1 teaspoon whole allspice
1.5kg small firm apples, weighed after peeling, coring and slicing

Method

  1. Combine sugar, salt, vinegar, and spices tied in a muslin (cheesecloth) bag, in a large heavy saucepan. Bring to the boil. Add sliced apples and simmer very gently until tender. Discard spice bag.
  2. Using a slotted spoon, lift out apple slices and pack in sterilised jars. Boil syrup steadily until thick and pour over the fruit. Seal jars and store in a cool dark place.
