Ingredients

55g sugar
185g mixed dried fruit
2 teaspoons mixed spice
90g butter
190ml water
300g self-raising flour, sifted
1 tablespoon treacle or golden syrup
1 1/2 teaspoons bicarbonate of soda
2-3 tablespoons milk, warmed

Method

  1. Place sugar, mixed fruit, spice, butter and water in a saucepan and heat gently, stirring, until sugar dissolves. Bring to the boil and simmer for 5 minutes. Remove from heat and cool slightly.
  2. Fold in flour with treacle or syrup and bicarbonate of soda dissolved in warm milk. Pour into a greased and lined 18 cm round cake tin.
  3. Bake in a preheated moderate oven (180°C) for 1 hour. Turn out and cool on a wire rack.
