A lunch or supper dish. Serve with green salad.

Ingredients

60g butter
3 tablespoons plain flour
1/2 teaspoon salt
freshly ground black pepper
500ml milk
440g tinned salmon, drained
920g potatoes, cooked and sliced
125g * mayonnaise [rid:4557]
125g cheddar cheese, grated
1 teaspoon worcestershire sauce
1/2 teaspoon french mustard
paprika
salt

Method

  1. Melt butter in a saucepan and blend in flour, salt and pepper. Gradually add milk off heat, then cook, stirring constantly, until thickened. Remove any bones and skin from salmon and flake. Stir into sauce. Arrange in alternate layers with potatoes in a shallow ovenproof dish.
  2. Combine mayonnaise, 60 g cheese, Worcestershire sauce and mustard. Spread over salmon mixture. Top with remaining grated cheese and sprinkle with paprika. Bake in a preheated moderate oven (180°C) for about 30 minutes.
