A lovely pinkish salad with horseradish.

Ingredients

Quantity Ingredient
750g new potatoes
2 tablespoons white wine
1 raw beetroot, peeled and finely grated
1 tablespoon horseradish, grated
3 tablespoons * mayonnaise [rid:4557]
pinch dry mustard
freshly ground black pepper
125g plain yoghurt
salt

Method

  1. Cook potatoes in their skins until tender, then peel while still hot and sprinkle with white wine. Allow to cool.
  2. Mix beetroot with horseradish and add to mayonnaise. Mix mustard, salt and pepper into yoghurt and add this to beetroot mixture. Spoon this dressing over the potatoes and serve.
