1kg sweet potatoes
salt
90g butter
95g brown sugar
125ml water

Method

  1. Cook sweet potatoes in boiling salted water until tender but still firm. Peel, then cut into halves or quarters.
  2. Heat butter, sugar and water in a heavy saucepan to simmering point. Add potatoes and cook on top of stove over very low heat, turning occasionally, for about 15 minutes or until potatoes are delicately golden brown on all sides.
