This is a dish often found in Italian restaurants, and is one of the simplest but most delicious ways of serving squid. Serve as a starter or as a main course with salads.

Ingredients

Quantity Ingredient
500g squid, cleaned
1 egg
125ml milk
plain flour
freshly ground black pepper
100g fine, dry breadcrumbs
oil, for deep-frying
salt

Method

  1. Cut squid tentacles into pieces about 8 cm long, and cut body into rings.
  2. Beat egg with milk in a shallow dish. Dredge squid in flour, seasoned with salt and pepper, then dip in egg mixture, and roll in breadcrumbs.
  3. Heat 8–10 cm of oil in a deep-fryer to 200°C. Fry the squid in oil for about 2 minutes or until golden. This should be done in several batches; do not overcrowd the pan. Drain on paper towels, sprinkle with salt and serve with tartare sauce.
