Raisin marmalade cake

Ingredients

Quantity Ingredient
300g self-raising flour
125g butter
165g brown sugar
60g raisins
2 eggs, beaten
6 tablespoons thick-cut marmalade

Method

  1. Sift flour into a bowl and rub in butter. Add sugar and raisins and mix well. Gradually add eggs and beat well. The mixture should be fairly stiff, but if necessary add 1 tablespoon milk.
  2. Put two-thirds of mixture into a greased and lined 15 cm square cake tin. Smooth top and spread 2 tablespoons marmalade over it. Spread over half the remaining cake mixture, add another 2 tablespoons marmalade and then rest of cake mixture. Top with remaining marmalade.
  3. Bake in a preheated moderate oven for 1 hour 25 minutes or until golden brown and well risen. Turn out onto a wire rack and cool. When cold, cut cake into squares to serve.
