An excellent way to use up leftover ham. Serve with a tossed salad.

Ingredients

Quantity Ingredient
60g raisins
125ml water
1 tablespoon horseradish relish
8 thin slices ham
280g rice, cooked
2 tablespoons butter
2 tablespoons plain flour
500ml milk
1/2 teaspoon salt
pinch cayenne
125g cheddar cheese, grated
parsley, to garnish

Method

  1. Bring raisins and water to the boil in a covered saucepan. Simmer for 10 minutes, then cool. Drain raisins and chop finely. Mix with half the horseradish and spread over each ham slice. Roll up.
  2. Spread rice in a greased shallow ovenproof dish and arrange ham rolls on top.
  3. Melt butter in a saucepan, stir in flour and cook for 2 minutes without browning. Gradually stir in milk and bring to the boil, stirring. Simmer until thickened. Add salt, cayenne, remaining horseradish and grated cheese. Stir until cheese melts, then pour sauce over ham rolls.
  4. Bake in a preheated moderate oven for 20 minutes. Serve hot, garnished with parsley.
