Good for picnics and summer lunches. The salad can be varied by using chicken, seafood, salami or other cold meat instead of ham, and other vegetables such as sliced celery, pepper or radish.

Ingredients

Quantity Ingredient
1.1kg Steamed rice, cooled to room temperature
250g ham, sliced 1 cm thick and diced
155g peas, cooked
60g parsley, chopped
120g spring onions, finely chopped, including green stalks
salt and freshly ground black pepper
125g Mayonnaise

Dressing

Quantity Ingredient
2 teaspoons dijon mustard
125ml olive oil
60ml good vinegar
1 garlic clove, crushed
freshly ground black pepper
salt

Method

  1. Beat dressing ingredients together well, or shake in a jar. Mix rice with dressing, then add ham, peas, parsley and spring onions, and season with salt and pepper, if necessary. Lastly, add mayonnaise.

  • Make ahead and store in refrigerator.
