This is a good way of using leftover cooked rice. It can be an accompaniment or a meal in itself, depending on what you add to the basic recipe.

Ingredients

Quantity Ingredient
60g butter
370g Steamed rice
flavouring, (see recipe)

Method

  1. Melt butter in a heavy saucepan, stir in rice and mix well, tossing lightly over gentle heat. Or, place in a preheated moderately slow oven, shaking dish occasionally, until thoroughly heated through.
  2. After buttering rice and before heating, any of the following may be added: sliced mushrooms; strips of tinned pimiento; diced celery or pepper; any cooked vegetables; cooked prawns, scallops or mussels; chopped parsley or mixed herbs; pesto alla Genovese; chopped shallot; shredded coconut and grated fresh ginger.
