Spiced pork chops with apple slices

4 pork loin chops, about 2 cm thick
freshly ground black pepper
1 tablespoon salt
2 garlic cloves, crushed
1 tablespoon worcestershire sauce
1/2 teaspoon dry mustard
60g butter
4 apples, cored and thickly sliced
salt

Method

  1. Use a sharp knife to cut through fat around chops at 2 cm intervals (this is to prevent chops curling during cooking). Season with salt and pepper.
  2. Combine oil, garlic, Worcestershire sauce and mustard and spread over chops. Melt half the butter. Grill chops under a preheated moderate grill or over coals, brushing every 2 minutes with melted butter and turning 2–3 times. Allow 12–16 minutes, depending on cut and thickness.
  3. Meanwhile, fry apple slices gently in remaining butter until golden brown on both sides. Serve with chops.
