Ingredients

Quantity Ingredient
6 onions, chopped
6 sticks celery, chopped
500ml cider vinegar
220g sugar
1 tablespoon salt
1/2 tablespoon mustard seeds
or 1/2 tablespoon celery seeds
12 red peppers, cored, seeded and chopped
or 12 green peppers, cored, seeded and chopped
or 12 green and red peppers, cored, seeded and chopped

Method

  1. Cover vegetables with boiling water, then drain. Put them in a large saucepan, cover with cold water, bring to the boil and drain again.
  2. Mix vinegar, sugar, salt and mustard or celery seeds in pan and bring to the boil. Add vegetables and simmer for about 10 minutes. Adjust seasoning if necessary.
  3. Spoon vegetables into hot, sterilised jars. Fill to overflowing with cooking liquid and seal.
