125g peanut butter
125g butter
110g sugar
115g brown sugar
1/2 teaspoon natural vanilla extract
1 egg
185g plain flour
1/2 teaspoon baking powder
3/4 teaspoon bicarbonate of soda
1/4 teaspoon salt

Method

  1. Cream peanut butter, butter and sugars together, then beat in vanilla and egg. Sift in flour, baking powder, bicarbonate of soda and salt and mix to a soft dough. Wrap in plastic wrap and chill for 30 minutes.
  2. Roll dough into walnut-size balls and place, well apart, on greased baking trays. Flatten, crisscross fashion, with a fork dipped in flour. Bake in a preheated moderately hot oven for 10–12 minutes until risen and golden brown.

Variations

  • Peanut butter and raisin cookies: Follow recipe for peanut butter cookies, stirring in 40 g chopped raisins with the flour.

    Orange peanut butter cookies: Follow recipe for peanut butter cookies, substituting 1 teaspoon grated orange zest for vanilla.
