60g butter
4 passionfruit
2 egg yolks
110g sugar

Method

  1. Melt butter in top of a double saucepan or in a bowl over a pan of simmering water. Add passionfruit pulp, egg yolks and sugar.
  2. Stir over gentle heat until the mixture has thickened. Cool, pour into sterilised jar and seal. Will keep for 2–3 months in the refrigerator or up to 1 month in a cool, dark place.
