Ingredients

200g macaroni or fancy pasta (shells, bows, etc.)
2 tablespoons oil
250g thick ham, cubed
115g black olives, halved and pitted
155g peas, cooked
125-250g * mayonnaise [rid:4557]
2 tablespoons french mustard
freshly ground black pepper
2 tomatoes, peeled and quartered
salt

Method

  1. Cook macaroni in boiling salted water, with 1 tablespoon oil added, until al dente. Drain and rinse well. Sprinkle remaining oil over and toss well to coat – this will prevent macaroni sticking together. Add ham to macaroni with olives and peas. Cool.
  2. Combine 125 g mayonnaise with mustard and stir through cold macaroni mixture, adding a little more mayonnaise if necessary to give a creamy salad. Season with salt and pepper.
  3. Spoon into salad bowl. Place tomatoes around salad. Serve chilled.
