Ingredients

1kg fresh peas, shelled
salt
1 sprig fresh mint, (optional)
30g butter

Method

  1. Drop peas into enough boiling salted water to cover. Add mint, if using, and cook for 10–15 minutes until just tender.
  2. Drain, refresh under cold water, then return to pan with butter. Shake over low heat until hot and coated with butter. Serve immediately.

Variations

  • Chopped fresh mint or summer savory may be added to peas with butter; 125 g sliced sautéed mushrooms may be combined with peas just before serving.
